Gonna try to keep this short. Basically, I've played ESO for about two years (started right when Morrowind came out). I took one account to CP900, gave it to my wife who loves to play, and started a new account which I've taken to cp512 or something as of today (started January of this year). I currently have one of every class leveled to 50 (Dark elf Templar, Sorc, and Nightblade; Orc Warden; Argonian DK), as well as a second magplar (Khajiit), which is currently my main. What I'm getting at is that I've done it all, for the most part, and have experienced most of what the game has to offer (DSA, MA, Trials, Dungeons and PVE content…I do battlegrounds for pvp, b/c I hate cyrodiil with a holy passion).
My problem is…I'm bored. Every toon I make gets dropped because it's not as good as (and probably can't be as good as) the magplar that I've grown accustomed to, but I'm sick of being a magplar. My first toon, way back on my wife's account, was Breton Magplar. My first toon on my new account was Breton Magplar. Nothing beats a templar in terms of survivability and versatility, and every toon I make always falls short of that bar. I love being a magsorc, but it'll never be as good as a magplar. That's just the reality of it.
I realize a lot of this is my experience and lack thereof, meaning that I'm good with a templar because I've played the templar a lot, and I suck with other classes because I haven't played them a lot — but still, the point remains. I can't even do stam toons, either; the lack of resources and the pure squishiness of them are frustrating enough that I never get past it to see if there's a way to be better on the other side.
As it stands, I can solo nearly all of the PVE content, from delves and public dungeons to instance dungeons and world bosses. My magplar is nigh on indestructible — and he's boring as hell.
Any of you guys experienced this? Ever get stuck on one class? I'd love to know how to get out of this rut, and I have zero issues starting a completely new toon if I have to. I just…I don't know what to do. :/

EDIT: I feel like I should add that I have no interest in min/maxing on target dummies, and don't really care about DPS. I play PVE solo mostly, so I need survivability, not dummy numbers. 🙂
